Pickle Fried Chicken Recipe with Stone Fruit Fennel Slaw

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Place chicken breasts in a resealable bag and pour pickle juice over them. Refrigerate for at least 1 hour.
  2. In a shallow dish, mix flour, paprika, garlic powder, salt, and pepper.
  3. Remove chicken from pickle juice and dredge in the flour mixture, coating evenly.
  4. Heat oil in a skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 5-7 minutes per side.
  5. Remove chicken from skillet and let it rest on a paper towel-lined plate.

For a healthier version, you can bake the chicken instead of frying it. Simply coat the chicken in the flour mixture, place it on a baking sheet, and bake at 375°F for 25-30 minutes until cooked through.
