Ingredients

  • Whole Chicken (about 4-5 lbs)
  • Fresh Cranberries (2 cups)
  • Maple Syrup (1/2 cup)
  • Olive Oil (1/4 cup)
  • Garlic (5 cloves, minced)
  • Thyme (2 teaspoons, fresh)
  • Salt and Pepper (to taste)
  • Lemon (1, zested and juiced)

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse the chicken under cold water and pat it dry with paper towels.
  2. Rub salt and pepper generously inside and outside of the chicken.
  3. In a small saucepan over medium heat, combine fresh cranberries, maple syrup, minced garlic, and thyme. Simmer until the cranberries burst, about 10 minutes.
  4. Stir in lemon juice and zest before removing from heat.
  5. Place the chicken in a roasting pan and pour half of the glaze over the top.
  6. Insert a meat thermometer into the thickest part of the thigh and roast for 1 to 1.5 hours, basting every 30 minutes.
  7. Once cooked, let the chicken rest for at least 15 minutes before serving.
