Ingredients
- Whole Chicken (about 4-5 lbs)
- Fresh Cranberries (2 cups)
- Maple Syrup (1/2 cup)
- Olive Oil (1/4 cup)
- Garlic (5 cloves, minced)
- Thyme (2 teaspoons, fresh)
- Salt and Pepper (to taste)
- Lemon (1, zested and juiced)
Instructions
- Preheat your oven to 375°F (190°C). Rinse the chicken under cold water and pat it dry with paper towels.
- Rub salt and pepper generously inside and outside of the chicken.
- In a small saucepan over medium heat, combine fresh cranberries, maple syrup, minced garlic, and thyme. Simmer until the cranberries burst, about 10 minutes.
- Stir in lemon juice and zest before removing from heat.
- Place the chicken in a roasting pan and pour half of the glaze over the top.
- Insert a meat thermometer into the thickest part of the thigh and roast for 1 to 1.5 hours, basting every 30 minutes.
- Once cooked, let the chicken rest for at least 15 minutes before serving.
