- 8 ounces white chocolate, chopped
- ½ cup heavy cream
- 1 cup fresh raspberries
- ¼ cup powdered sugar
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
- Additional white chocolate for coating (optional)
Instructions
- Prepare the Raspberry Puree by heating 1 cup of raspberries with a couple of tablespoons of sugar until syrupy. Strain and cool.
- Create the Ganache by heating ½ cup of heavy cream, then pour over the chopped white chocolate. Let sit for a few minutes and stir until smooth.
- Mix in the Raspberry Puree, 1 tablespoon of butter, and 1 teaspoon of vanilla extract. Stir in ½ cup of powdered sugar to taste.
- Chill the mixture covered for about 2 hours until firm.
- Form the truffles using a scoop and roll into balls.
- Coat with melted chocolate if desired and let them set on a parchment-lined tray.
Notes
For a vegan version, use coconut cream and dairy-free chocolate. Ensure to use high-quality chocolate for the best flavor.
