White Chocolate Raspberry Truffles

Description

Decadent truffles combining creamy white chocolate and tart fresh raspberries, perfect for any special occasion.


Ingredients

  • 8 ounces white chocolate, chopped
  • ½ cup heavy cream
  • 1 cup fresh raspberries
  • ¼ cup powdered sugar
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • Additional white chocolate for coating (optional)

Instructions

  1. Prepare the Raspberry Puree by heating 1 cup of raspberries with a couple of tablespoons of sugar until syrupy. Strain and cool.
  2. Create the Ganache by heating ½ cup of heavy cream, then pour over the chopped white chocolate. Let sit for a few minutes and stir until smooth.
  3. Mix in the Raspberry Puree, 1 tablespoon of butter, and 1 teaspoon of vanilla extract. Stir in ½ cup of powdered sugar to taste.
  4. Chill the mixture covered for about 2 hours until firm.
  5. Form the truffles using a scoop and roll into balls.
  6. Coat with melted chocolate if desired and let them set on a parchment-lined tray.

Notes

For a vegan version, use coconut cream and dairy-free chocolate. Ensure to use high-quality chocolate for the best flavor.
