White Bean Mushroom Stew

Description

A comforting and hearty stew packed with fiber and nutrients, perfect for vegetarians and vegans.


Ingredients

  • 2 cups white beans, rinsed and drained
  • 8 oz mixed mushrooms (cremini and shiitake), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium vegetable broth
  • 1 tsp thyme (fresh or dried)
  • 2 bay leaves
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Ingredients: Rinse and drain the white beans. Chop the mushrooms, dice the onion, mince the garlic, and chop the carrots and celery.
  2. Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Then add garlic and cook for another minute.
  3. Add the Vegetables: Toss in diced carrots and celery, and sauté for about 5 minutes. Add chopped mushrooms, cooking for another 5 minutes.
  4. Stir in Seasonings and Beans: Add white beans, thyme, bay leaves, salt, and pepper. Mix well.
  5. Pour in the Broth: Add vegetable broth, bring to a boil, then reduce to a simmer for 25-30 minutes.
  6. Adjust Consistency and Flavor: Check thickness and seasoning. Add more broth if too thick, adjust seasoning to taste.
  7. Serve: Ladle stew into bowls and optionally drizzle with olive oil or sprinkle with fresh herbs.

Notes

Serve with crusty bread or a side salad for a complete meal. Best enjoyed fresh, but leftovers can be refrigerated or frozen.
