- 1 cup cottage cheese (low-fat or full-fat)
- 1 cup almond flour
- 1/4 cup maple syrup
- 1/2 cup chocolate chips (dark or sugar-free)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup chopped nuts (optional)
Instructions
- Blend the cottage cheese in a medium mixing bowl until smooth and creamy.
- Add maple syrup and vanilla extract, whisking until fully incorporated.
- In a separate bowl, whisk together almond flour, baking soda, and salt.
- Gradually fold the dry mixture into the wet mixture, stirring with a spatula.
- Gently fold in the chocolate chips and chopped nuts.
- Chill the cookie dough in the refrigerator for about 30 minutes (optional).
- Scoop and enjoy straight from the bowl or serve in dessert cups with a sprinkle of sea salt.
Notes
For a vegan version, swap cottage cheese with silken tofu and maple syrup with agave nectar. Store leftovers in an airtight container in the fridge for up to one week.
