Ingredients

  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1/2 cup chocolate chips (dark or sugar-free)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Blend the cottage cheese in a medium mixing bowl until smooth and creamy.
  2. Add maple syrup and vanilla extract, whisking until fully incorporated.
  3. In a separate bowl, whisk together almond flour, baking soda, and salt.
  4. Gradually fold the dry mixture into the wet mixture, stirring with a spatula.
  5. Gently fold in the chocolate chips and chopped nuts.
  6. Chill the cookie dough in the refrigerator for about 30 minutes (optional).
  7. Scoop and enjoy straight from the bowl or serve in dessert cups with a sprinkle of sea salt.

Notes
