Ingredients

- 1 lb Fresh Shrimp, peeled and deveined
- 2 Medium Sweet Potatoes, boiled and mashed
- 1/2 cup Rice Flour
- 1/2 Medium Onion, diced
- 2 Garlic Cloves, minced
- 1 Egg
- 1/2 tsp Black Pepper
- 1/2 tsp Salt
- Oil for frying
Instructions
- Prepare the shrimp by peeling, deveining, and rinsing under cold water. Pat dry.
- Boil or steam sweet potatoes until fork-tender, about 10-15 minutes, then mash.
- In a bowl, combine mashed sweet potatoes, shrimp, onion, garlic, egg, rice flour, black pepper, and salt. Mix well.
- Heat oil in a skillet over medium heat. Test with a small amount of batter; it should bubble.
- Scoop tablespoon-sized portions of the mixture and form patties.
- Carefully fry fritters for 3-4 minutes on each side until golden brown, avoiding overcrowding.
- Drain fritters on paper towels and serve warm.
Notes
Serve with a sweet chili dipping sauce and garnish with fresh herbs.
