Description

Delicious and nutritious fritters made with shrimp and sweet potatoes, perfect for a healthy snack or appetizer.


Ingredients

  • 1 lb Fresh Shrimp, peeled and deveined
  • 2 Medium Sweet Potatoes, boiled and mashed
  • 1/2 cup Rice Flour
  • 1/2 Medium Onion, diced
  • 2 Garlic Cloves, minced
  • 1 Egg
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • Oil for frying

Instructions

  1. Prepare the shrimp by peeling, deveining, and rinsing under cold water. Pat dry.
  2. Boil or steam sweet potatoes until fork-tender, about 10-15 minutes, then mash.
  3. In a bowl, combine mashed sweet potatoes, shrimp, onion, garlic, egg, rice flour, black pepper, and salt. Mix well.
  4. Heat oil in a skillet over medium heat. Test with a small amount of batter; it should bubble.
  5. Scoop tablespoon-sized portions of the mixture and form patties.
  6. Carefully fry fritters for 3-4 minutes on each side until golden brown, avoiding overcrowding.
  7. Drain fritters on paper towels and serve warm.

Notes

Serve with a sweet chili dipping sauce and garnish with fresh herbs.
