- 4 medium-sized Beets
- 2 medium-sized Sweet Potatoes
- 100g Feta Cheese
- 3 tablespoons Olive Oil
- 1/4 cup Fresh Mint or Parsley, chopped
- Juice from 1 medium Lemon
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Trim the beet tops and bottoms, then peel and cut into cubes.
- Peel and dice the sweet potatoes into similar-sized cubes as the beets.
- Toss the diced beets and sweet potatoes with olive oil, salt, and pepper in a large mixing bowl.
- Spread the veggies on a baking sheet lined with parchment paper and roast for 30-40 minutes.
- Once roasted, allow to cool slightly and combine in a serving bowl with crumbled feta and chopped herbs.
- Drizzle lemon juice over the salad and toss gently to combine flavors.
- Serve warm or cool as a starter or side dish.

For a vegan option, substitute feta cheese with a plant-based alternative. You can add proteins like grilled chicken or chickpeas for a heartier meal.
