Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup sugar
  • ½ cup unsalted butter, melted
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into a tart pan and bake for 10 minutes. Allow to cool.
  3. Whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  4. Spoon vanilla cream filling into the cooled tart crust, smoothing the top. Gently toss fresh raspberries with a teaspoon of sugar if desired.
  5. Scatter raspberries over the cream filling. Cover and refrigerate for at least 2 hours.

Notes

For a lighter version, you can substitute heavy cream with Greek yogurt. Skipping the chilling time may result in a runny filling.
