- 1 ½ cups graham cracker crumbs
- ⅓ cup sugar
- ½ cup unsalted butter, melted
- 1 cup heavy cream
- ½ cup powdered sugar
- 2 teaspoons vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into a tart pan and bake for 10 minutes. Allow to cool.
- Whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Spoon vanilla cream filling into the cooled tart crust, smoothing the top. Gently toss fresh raspberries with a teaspoon of sugar if desired.
- Scatter raspberries over the cream filling. Cover and refrigerate for at least 2 hours.
Notes
For a lighter version, you can substitute heavy cream with Greek yogurt. Skipping the chilling time may result in a runny filling.
