Description

Ingredients

  • High-quality pork sausages
  • Yukon Gold or Maris Piper potatoes
  • Unsalted butter
  • Whole milk or heavy cream
  • Yellow or brown onions
  • Beef or vegetable stock
  • All-purpose flour
  • Salt and pepper
  • Fresh parsley, chopped

Instructions

  1. Peel and chop your potatoes, then place them in a pot of salted cold water and bring to a boil.
  2. Heat a large skillet over medium heat, add sausages, and cook until browned, about 10-15 minutes.
  3. Remove the sausages and add sliced onions to the skillet; cook until golden brown, about 10 minutes.
  4. Sprinkle flour over the onions, stir, and gradually whisk in stock; let simmer until thickened, about 5 minutes.
  5. Drain tender potatoes, return to pot, add butter and milk or cream, and mash until smooth.
  6. Serve sausages on mashed potatoes, pour onion gravy over, and garnish with parsley.
