- 1 cup graham cracker crumbs
- 1/4 cup unsweetened shredded coconut
- 1/3 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh lime juice
- 2 tablespoons lime zest
- 1/2 cup whipped cream (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until evenly coated.
- Transfer the crumb mixture into a greased 8×8-inch baking pan, pressing it into an even layer. Bake for 10 minutes until slightly golden.
- In another bowl, whisk together sweetened condensed milk, fresh lime juice, lime zest, and a pinch of salt until smooth.
- Once the crust has cooled slightly, pour the lime filling over it and spread evenly. Bake for 20 minutes or until the filling is set but jiggles slightly in the center.
- Allow to cool completely in the pan before cutting into squares and refrigerating for a creamy texture.
Notes
Serve chilled for a refreshing summer treat. Top with fresh berries or a drizzle of lime glaze for extra flair.
