Description

Delightfully refreshing Coconut Lime Bars that balance creamy coconut richness with zesty lime brightness, perfect for summer gatherings.


Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup fresh lime juice
  • 1 tbsp lime zest
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture firmly into the bottom of a greased or lined 9×9 inch baking dish.
  2. Place the crust in the preheated oven and bake for about 10 minutes, or until it turns a light golden color.
  3. In another bowl, whisk together the coconut milk, sweetened condensed milk, fresh lime juice, lime zest, and a pinch of salt until well combined and smooth.
  4. Once the crust is baked, remove it from the oven and pour the filling over it. Return the baking dish to the oven and bake for an additional 20 minutes.
  5. Let the bars cool to room temperature before refrigerating them for at least 2 hours.
  6. After chilling, cut the bars into squares, and garnish with additional lime zest or toasted coconut as desired.

Notes

For a vegan version, substitute with coconut yogurt and a dairy-free sweetened condensed milk.
