Delightfully refreshing Coconut Lime Bars that balance creamy coconut richness with zesty lime brightness, perfect for summer gatherings.
Ingredients

- 1 can (13.5 oz) full-fat coconut milk
- 1/2 cup fresh lime juice
- 1 tbsp lime zest
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup unsalted butter, melted
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand. Press this mixture firmly into the bottom of a greased or lined 9×9 inch baking dish.
- Place the crust in the preheated oven and bake for about 10 minutes, or until it turns a light golden color.
- In another bowl, whisk together the coconut milk, sweetened condensed milk, fresh lime juice, lime zest, and a pinch of salt until well combined and smooth.
- Once the crust is baked, remove it from the oven and pour the filling over it. Return the baking dish to the oven and bake for an additional 20 minutes.
- Let the bars cool to room temperature before refrigerating them for at least 2 hours.
- After chilling, cut the bars into squares, and garnish with additional lime zest or toasted coconut as desired.
Notes
For a vegan version, substitute with coconut yogurt and a dairy-free sweetened condensed milk.
