- 3 cups stale bread (brioche, challah, or sourdough)
- 3 large eggs
- 1 cup whole milk
- 1 cup sweetened condensed milk
- 1 cup coconut milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- Nutmeg (optional, for sprinkling)
Instructions
- Tear or cut the bread into bite-sized pieces and place them in a large mixing bowl.
- In another bowl, whisk together the eggs, whole milk, sweetened condensed milk, coconut milk, vanilla extract, cinnamon, and a pinch of nutmeg until combined.
- Pour the custard mixture over the bread pieces and gently push the bread down to soak. Let sit for 15 minutes.
- Preheat your oven to 350°F (175°C).
- Transfer the soaked bread mixture into a greased 9×13 inch baking dish.
- Bake for 45 minutes or until the top is golden brown and a toothpick comes out clean.
- Allow the pudding to cool for at least 10 minutes before serving.
Notes
