Ingredients

Scale
  • 3 cups stale bread (brioche, challah, or sourdough)
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup sweetened condensed milk
  • 1 cup coconut milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • Nutmeg (optional, for sprinkling)

Instructions

  1. Tear or cut the bread into bite-sized pieces and place them in a large mixing bowl.
  2. In another bowl, whisk together the eggs, whole milk, sweetened condensed milk, coconut milk, vanilla extract, cinnamon, and a pinch of nutmeg until combined.
  3. Pour the custard mixture over the bread pieces and gently push the bread down to soak. Let sit for 15 minutes.
  4. Preheat your oven to 350°F (175°C).
  5. Transfer the soaked bread mixture into a greased 9×13 inch baking dish.
  6. Bake for 45 minutes or until the top is golden brown and a toothpick comes out clean.
  7. Allow the pudding to cool for at least 10 minutes before serving.

Notes

For a richer flavor, consider adding a drizzle of caramel or chocolate sauce. You can also serve it chilled with whipped cream or fresh fruit.
