- 2 cups corn kernels (fresh or canned)
- 1/4 cup honey (or maple syrup for vegan)
- 1 can (15 oz) creamed corn
- 1/4 cup butter (or vegan butter)
- 2 eggs (or flaxseed meal mixture for vegan)
- 1 cup cornmeal
- 1 cup shredded cheddar cheese (or dairy-free cheese)
- 1 cup milk (or almond/oat milk for dairy-free)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a large mixing bowl, combine corn kernels, creamed corn, honey, melted butter, eggs, cornmeal, cheddar cheese, and milk. Stir until smooth.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Bake for approximately 45 minutes, until the top is golden brown.
- Allow to cool for 10 minutes before serving.
Notes
For a lighter version, try using light creamed corn, Greek yogurt in place of milk, or omit butter for olive oil.
