Description

A comforting and creamy soup made with traditional Swedish meatballs, perfect for warming hearts and tummies.


Ingredients

  • 1 pound Ground Beef or Pork
  • 1/2 cup Breadcrumbs (or gluten-free option like almond flour)
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Heavy Cream (or half-and-half/coconut milk)
  • 4 cups Chicken or Vegetable Broth
  • 1/4 cup Fresh Parsley, chopped
  • Salt and Pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef or pork, breadcrumbs, diced onion, minced garlic, salt, and pepper. Mix gently until just combined.
  2. Roll the mixture into meatballs about one inch in diameter.
  3. In a large pot over medium heat, add olive oil and sauté the meatballs for about 5-7 minutes, turning until browned on all sides.
  4. Remove the meatballs and set aside. In the same pot, add broth and bring to a simmer, scraping the pot to deglaze.
  5. Stir in heavy cream and let simmer gently for 5 minutes. Add chopped parsley, salt, and pepper to taste.
  6. Return the meatballs to the pot and cook in the broth for an additional 10-15 minutes.
  7. Ladle the soup into bowls and garnish with additional parsley.

Notes

Great served with a dollop of sour cream, crusty bread, or a light salad.
