A comforting and creamy soup made with traditional Swedish meatballs, perfect for warming hearts and tummies.
Ingredients

- 1 pound Ground Beef or Pork
- 1/2 cup Breadcrumbs (or gluten-free option like almond flour)
- 1 Onion, diced
- 2 cloves Garlic, minced
- 1 cup Heavy Cream (or half-and-half/coconut milk)
- 4 cups Chicken or Vegetable Broth
- 1/4 cup Fresh Parsley, chopped
- Salt and Pepper to taste
Instructions
- In a large mixing bowl, combine ground beef or pork, breadcrumbs, diced onion, minced garlic, salt, and pepper. Mix gently until just combined.
- Roll the mixture into meatballs about one inch in diameter.
- In a large pot over medium heat, add olive oil and sauté the meatballs for about 5-7 minutes, turning until browned on all sides.
- Remove the meatballs and set aside. In the same pot, add broth and bring to a simmer, scraping the pot to deglaze.
- Stir in heavy cream and let simmer gently for 5 minutes. Add chopped parsley, salt, and pepper to taste.
- Return the meatballs to the pot and cook in the broth for an additional 10-15 minutes.
- Ladle the soup into bowls and garnish with additional parsley.
Notes
Great served with a dollop of sour cream, crusty bread, or a light salad.
