- 8 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 cup heavy cream
- 3 large eggs
- 2 tsp vanilla extract
- 1.5 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 ripe peaches, sliced
- 1 cup mixed summer berries (strawberries, blueberries, raspberries)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix well. Then, mix in sour cream, heavy cream, and vanilla extract.
- Add the eggs, one at a time, mixing gently after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 60 minutes, until the center is set but slightly jiggly.
- Cool in the oven for 1 hour, then chill in the fridge for at least 4 hours or overnight.
- Before serving, top with sliced peaches and mixed berries.
Notes
For best results, chill the cheesecake overnight. Consider using a water bath to prevent cracking.
