Ingredients

  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 cup heavy cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1.5 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 ripe peaches, sliced
  • 1 cup mixed summer berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs and melted butter. Press firmly into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and mix well. Then, mix in sour cream, heavy cream, and vanilla extract.
  4. Add the eggs, one at a time, mixing gently after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 60 minutes, until the center is set but slightly jiggly.
  7. Cool in the oven for 1 hour, then chill in the fridge for at least 4 hours or overnight.
  8. Before serving, top with sliced peaches and mixed berries.

Notes

For best results, chill the cheesecake overnight. Consider using a water bath to prevent cracking.
