Instructions
- Preheat your oven to 350°F (175°C).
- Wash, hull, and chop 1 cup of fresh strawberries.
- In a medium bowl, whisk together 1 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt.
- In a large mixing bowl, cream together ½ cup of softened unsalted butter and ½ cup of granulated sugar until light and fluffy.
- Add in one large egg and 1 teaspoon of vanilla extract; mix until fully incorporated.
- Gradually add your dry mixture to the wet ingredients and mix until just combined.
- Fold in your prepared strawberries gently.
- Drop heaping spoonfuls of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
