- 2 cups fresh strawberries, hulled and sliced
- 8 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the strawberries, 2 tablespoons of granulated sugar, and a teaspoon of lemon juice; toss and set aside.
- In a mixing bowl, combine 1 cup of flour, brown sugar, salt, and softened butter; blend until crumbly and press into a greased 8×8-inch baking dish.
- Bake the crust for 12-15 minutes until lightly golden; then cool slightly.
- In another bowl, beat the cream cheese until smooth, then add 1/4 cup sugar, egg, and vanilla; mix until creamy.
- Spread the cream cheese filling over the crust, then layer the strawberry filling on top.
- In a clean bowl, combine 1/2 cup flour, 1/4 cup sugar, and softened butter; mix until crumbly; sprinkle over strawberries.
- Bake for 25-30 minutes until golden brown and set; cool completely before slicing.
Notes
Serve chilled or at room temperature, optionally topped with fresh mint or accompanied by ice cream.
