  • 16 oz. softened cream cheese
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup diced fresh strawberries
  • Strawberry sauce (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham crackers, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese until smooth, then add sugar, sour cream, and vanilla. Mix until smooth.
  4. Add eggs one at a time, mixing on low speed until incorporated.
  5. Fold in diced strawberries.
  6. Pour the filling over the crust and smooth the top.
  7. Bake in the preheated oven for approximately 60 minutes.
  8. Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  9. Before serving, top with fresh strawberries or strawberry sauce.
