- 1/2 cup granulated sugar
- 1/2 cup melted butter
- 16 oz. softened cream cheese
- 1 cup granulated sugar
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup diced fresh strawberries
- Strawberry sauce (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham crackers, sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
- Beat cream cheese until smooth, then add sugar, sour cream, and vanilla. Mix until smooth.
- Add eggs one at a time, mixing on low speed until incorporated.
- Fold in diced strawberries.
- Pour the filling over the crust and smooth the top.
- Bake in the preheated oven for approximately 60 minutes.
- Cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh strawberries or strawberry sauce.
