Description

Ingredients

  • 1 pound flank steak
  • 2 cups cooked rice
  • 1 cup black beans
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado
  • 1 cup salsa
  • 1 cup shredded cheese
  • Fresh cilantro (optional)
  • Lime wedges

Instructions

  1. Marinate the flank steak in olive oil, lime juice, cumin, garlic powder, salt, and pepper for about 15 minutes.
  2. While the steak marinates, cook your rice according to package instructions.
  3. Heat a grill or skillet over high heat. Add the marinated steak and cook for about 4-6 minutes per side, then let it rest for 5 minutes before slicing.
  4. In the same skillet, add a bit of oil if needed and sauté the diced bell pepper until just tender, about 3-4 minutes.
  5. Assemble your bowl starting with cooked rice, followed by black beans, corn, sautéed bell peppers, and sliced steak.
  6. Top with avocado, cheese, salsa, and fresh cilantro. Squeeze lime juice over everything before serving.

Notes

For a lower-carb version, use cauliflower rice instead of regular rice. Consider adding jalapeño slices for extra heat.
