Description

Ingredients

  • 2 cups fresh spinach, chopped
  • 4 large eggs
  • 1 cup feta cheese, crumbled
  • 1 cup milk (whole or skim, or plant-based)
  • 1 ½ cups whole wheat flour
  • 1 tablespoon baking powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. In a large bowl, combine whole wheat flour, baking powder, ground black pepper, and salt.
  4. In a separate bowl, beat together the eggs and milk until combined.
  5. Gradually fold the wet mixture into the dry ingredients.
  6. Fold in the fresh spinach and crumbled feta cheese.
  7. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for about 20 to 25 minutes or until the tops are golden brown.
  9. Remove from oven and let cool for a few minutes before transferring to a wire rack.
