  • ¼ cup Cilantro, chopped
  • 2 tbsp Lime juice

Instructions

  1. Prepare the Ingredients: Finely chop onions and garlic; slice the jalapeños.
  2. Sauté the Vegetables: In a large pot, heat oil over medium heat. Sauté onions for 3-4 minutes, then add garlic and jalapeños for 2 minutes.
  3. Cook the Chicken: Add chicken to the pot, searing both sides for about 5 minutes.
  4. Add Broth and Simmer: Pour in chicken broth, bring to a boil, then simmer for 20 minutes.
  5. Shred the Chicken: Remove chicken, shred it, and return it to the pot.
  6. Incorporate Cream Cheese and Corn: Stir in cream cheese till melted, then add corn.
  7. Final Touches: Add cheddar cheese, stir until melted, then squeeze lime juice and add cilantro.
