- 2 Chicken breasts
- 2 Jalapeños, sliced
- 8 oz Cream cheese
- 4 cups Chicken broth
- 1 cup Corn, frozen
- 1 cup Cheddar cheese, shredded
- 3 cloves Garlic, minced
- 1 Onion, chopped
- ¼ cup Cilantro, chopped
- 2 tbsp Lime juice
Instructions
- Prepare the Ingredients: Finely chop onions and garlic; slice the jalapeños.
- Sauté the Vegetables: In a large pot, heat oil over medium heat. Sauté onions for 3-4 minutes, then add garlic and jalapeños for 2 minutes.
- Cook the Chicken: Add chicken to the pot, searing both sides for about 5 minutes.
- Add Broth and Simmer: Pour in chicken broth, bring to a boil, then simmer for 20 minutes.
- Shred the Chicken: Remove chicken, shred it, and return it to the pot.
- Incorporate Cream Cheese and Corn: Stir in cream cheese till melted, then add corn.
- Final Touches: Add cheddar cheese, stir until melted, then squeeze lime juice and add cilantro.
- Serve: Ladle into bowls, garnish with more cheese and cilantro if desired.
Notes
For a lighter version, use low-fat cream cheese and opt for chicken thighs for richer flavor.
