- 1/2 cup dulce de leche

Instructions
- Cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition. Add the ground cinnamon and vanilla extract.
- Whisk together the all-purpose flour and baking powder in a separate bowl and gradually add to the wet mixture.
- Drop rounded balls of dough onto a lined baking sheet.
- Preheat oven to 350°F (175°C) and bake for 12-15 minutes until edges are golden.
- Cool cookies and assemble by spreading dulce de leche between two cookies.
Notes
For a healthier option, use whole wheat flour and coconut sugar.
