Ingredients

  • 34 pounds Beef Short Ribs
  • 2 cups Apple Cider
  • 1 cup Beef Broth
  • 2 medium Onions, sliced
  • 2 medium Carrots, chopped
  • 4 cloves Garlic, minced
  • 4 sprigs Fresh Thyme
  • 2 Bay Leaves
  • Salt and Pepper, to taste

Instructions

  1. Preheat your oven to 325°F (165°C) and season the beef short ribs with salt and pepper.
  2. In a large Dutch oven, heat oil over medium-high and brown the beef short ribs on all sides.
  3. Remove the ribs and sauté onions and carrots for 5-7 minutes, then add garlic and sauté for another minute.
  4. Deglaze the pot with apple cider, scraping up any browned bits.
  5. Return the ribs to the pot, add beef broth, bay leaves, and thyme, and stir gently.
  6. Cover and braise in the oven for about 3 hours until the meat is tender.
  7. Let rest before serving over creamy mashed potatoes or alongside roasted vegetables.
