- 3–4 pounds Beef Short Ribs
- 2 cups Apple Cider
- 1 cup Beef Broth
- 2 medium Onions, sliced
- 2 medium Carrots, chopped
- 4 cloves Garlic, minced
- 4 sprigs Fresh Thyme
- 2 Bay Leaves
- Salt and Pepper, to taste
Instructions
- Preheat your oven to 325°F (165°C) and season the beef short ribs with salt and pepper.
- In a large Dutch oven, heat oil over medium-high and brown the beef short ribs on all sides.
- Remove the ribs and sauté onions and carrots for 5-7 minutes, then add garlic and sauté for another minute.
- Deglaze the pot with apple cider, scraping up any browned bits.
- Return the ribs to the pot, add beef broth, bay leaves, and thyme, and stir gently.
- Cover and braise in the oven for about 3 hours until the meat is tender.
- Let rest before serving over creamy mashed potatoes or alongside roasted vegetables.
Notes
Opt for well-marbled cuts for best results. Consider using smoked sea salt for enhanced flavor.
