Description

A quick and healthy dinner option featuring roasted chicken and vegetables served in soft pita bread with a flavorful herby ranch dressing.


Ingredients

  • 1 lb Chicken Breast
  • 2 tablespoons Olive Oil
  • 1 yellow Bell Pepper
  • 1 red Bell Pepper
  • 1 medium Red Onion
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 4 pieces Pita Bread
  • 1 cup Greek Yogurt
  • 2 tablespoons Fresh Herbs (parsley, dill, or chives)
  • 1 tablespoon Lemon Juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the chicken into bite-sized pieces and slice the bell peppers and onion.
  3. In a large mixing bowl, combine chicken and veggies with olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.
  4. Spread the mixture on a sheet pan and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  5. Mix Greek yogurt, herbs, lemon juice, salt, and pepper in a small bowl for the ranch dressing.
  6. Once the chicken is ready, fill each pita with the chicken and vegetables, then drizzle with the herby ranch.
  7. Serve warm and enjoy!

Notes

Feel free to swap chicken for tofu or chickpeas, and use whole wheat or gluten-free pitas as needed.
