- 2 large Sweet Potatoes, peeled and diced
- 2 medium Carrots, peeled and diced
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 4 cups Vegetable Broth (low-sodium)
- 1 tsp Fresh Thyme
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Prepare the Vegetables: Peel and dice the sweet potatoes and carrots evenly. Chop the onion finely and mince the garlic.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add Vegetables and Broth: Raise the heat to medium-high and add the diced sweet potatoes and carrots. Pour in the vegetable broth and bring to a boil.
- Season and Simmer: Reduce heat to a simmer. Add fresh thyme, and season with salt and pepper. Cover the pot and cook for about 20 minutes, or until the sweet potatoes and carrots are tender.
- Blend the Soup: Blend the soup until it reaches a creamy consistency using an immersion blender or a countertop blender.
- Adjust Seasoning: Taste the soup and adjust seasoning if needed, adding a drizzle of olive oil before serving.

Garnish with fresh herbs, drizzle with balsamic glaze, or stir in greens for extra flavor.
