Instructions

  1. Prepare the ingredients by peeling and deveining the shrimp, then rinse the quinoa under cold water.
  2. Cook the quinoa: In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes.
  3. Sauté the garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Add the shrimp: Add the shrimp to the skillet and cook for 2-3 minutes on each side until pink and cooked through. Season with salt and pepper.
  5. Combine and serve: Add the cooked quinoa to the skillet, toss with shrimp and garlic butter, squeeze lemon juice, garnish with parsley, and serve immediately.
