Description

Ingredients

  • Irish Beef Steaks (8 oz)
  • Irish Whiskey (1/4 cup)
  • Heavy Cream (1 cup)
  • Butter (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Potatoes (2 large)
  • Kale or Cabbage (1 cup, chopped)
  • Milk (1/2 cup)
  • Green Onions (1/4 cup, sliced)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare the Colcannon: Peel and chop the potatoes into uniform chunks.
  2. Boil Potatoes: Place the potatoes in a pot, cover with salted water, and bring to a boil. Cook for about 15-20 minutes or until fork-tender.
  3. Cook the Cabbage: Sauté green onions and kale or cabbage in butter over medium heat until wilted (about 5 minutes).
  4. Mash the Potatoes: Drain the potatoes and return them to the pot. Add milk and mash until smooth. Mix in the sautéed greens, season with salt and pepper.
  5. Sear the Steaks: Season the steaks with salt and pepper, and sear in a hot cast-iron skillet for 4-5 minutes on each side for medium-rare.
  6. Create the Whiskey Cream Sauce: In the same skillet, melt butter, sauté garlic, deglaze with whiskey, and then add heavy cream. Cook until thickened.
  7. Serve: Plate the colcannon on one side and the steak drizzled with whiskey cream on the other.

Notes

Let steaks rest for at least 5 minutes before serving to ensure juices redistribute.
