  • For the Chocolate Ganache:
    • 8 oz Dark Chocolate (at least 60% cocoa)
    • 1/2 cup Heavy Cream (or coconut cream)

Instructions

  1. Prepare the Tart Crust: Preheat oven to 350°F (175°C). Cream unsalted butter and powdered sugar, then add egg yolk. Mix in flour and cocoa to form a dough.
  2. Roll Out the Dough: On a floured surface, roll the dough to 1/4 inch thickness, place it in a tart pan, and trim edges.
  3. Blind Bake the Crust: Cover with parchment, add weights, and bake for 15 minutes; remove weights and bake for another 10 minutes until crisp.
  4. Make the Salted Caramel: Heat granulated sugar until melted and amber. Remove from heat, add heavy cream, then stir in butter and sea salt.
  5. Assemble the Tart: Pour the salted caramel into the baked crust and let it set for 30 minutes.
  6. Prepare the Chocolate Ganache: Heat heavy cream until simmering, pour over chopped dark chocolate, mix until smooth.
  7. Chill and Serve: Pour ganache over caramel, refrigerate for several hours, and sprinkle sea salt before serving.

Notes

Serve with fresh berries, whipped cream, or ice cream for added texture and flavor. Store leftovers in an airtight container in the fridge for up to a week.
