- 2 large beets, spiralized or sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Peel the beets and spiralize them into thin noodles or slice them into matchsticks.
- Place the spiralized or sliced beets on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
- Spread the beets in a single layer and roast for 25 to 30 minutes, stirring halfway through.
- In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper.
- After roasting, drizzle the vinaigrette over the beets and toss gently to combine. Serve immediately or chill for a refreshing salad.
