Ingredients

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the beets and spiralize them into thin noodles or slice them into matchsticks.
  3. Place the spiralized or sliced beets on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat.
  4. Spread the beets in a single layer and roast for 25 to 30 minutes, stirring halfway through.
  5. In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, and a pinch of salt and pepper.
  6. After roasting, drizzle the vinaigrette over the beets and toss gently to combine. Serve immediately or chill for a refreshing salad.
