- 2 lbs Carrots
- 1 cup Ricotta Cheese
- 3 tablespoons Honey
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- Red Chili Flakes (to taste)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots. Cut into uniform pieces, about 2 inches long.
- Toss carrots with olive oil, salt, and black pepper, then spread on a baking sheet.
- Roast in the oven for 25-30 minutes, turning halfway through.
- In a bowl, whip the ricotta until light and fluffy.
- Gently warm the honey in a small saucepan, optionally adding red chili flakes.
- Once carrots are tender, arrange them on a plate, dollop whipped ricotta on top, and drizzle with honey.
- Garnish with additional red chili flakes or fresh herbs before serving.
Notes
For a vegan option, substitute ricotta with a dairy-free alternative and honey with maple syrup.
