Transform humble carrots into a gourmet dish with whipped ricotta and a drizzle of hot honey.


Ingredients

  • 2 lbs Carrots
  • 1 cup Ricotta Cheese
  • 3 tablespoons Honey
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • Red Chili Flakes (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots. Cut into uniform pieces, about 2 inches long.
  3. Toss carrots with olive oil, salt, and black pepper, then spread on a baking sheet.
  4. Roast in the oven for 25-30 minutes, turning halfway through.
  5. In a bowl, whip the ricotta until light and fluffy.
  6. Gently warm the honey in a small saucepan, optionally adding red chili flakes.
  7. Once carrots are tender, arrange them on a plate, dollop whipped ricotta on top, and drizzle with honey.
  8. Garnish with additional red chili flakes or fresh herbs before serving.

Notes

For a vegan option, substitute ricotta with a dairy-free alternative and honey with maple syrup.
