  • 2 cups red velvet cake crumbs
  • 1 cup powdered sugar
  • ½ cup semi-sweet chocolate chips

  • 1 tablespoon cocoa powder

Instructions

  1. Prepare the cake crumbs by crumbling either leftover red velvet cake or baking a fresh cake and letting it cool completely.
  2. In a large mixing bowl, blend cream cheese, red velvet cake crumbs, and powdered sugar until smooth.
  3. Scoop portions of the mixture and roll them into 1-inch diameter balls. Place on a baking sheet lined with parchment paper.
  4. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
  5. Dip each truffle into the melted chocolate, letting excess drip off, then roll in cocoa powder or sprinkles.
