Instructions
- Prepare the cake crumbs by crumbling either leftover red velvet cake or baking a fresh cake and letting it cool completely.
- In a large mixing bowl, blend cream cheese, red velvet cake crumbs, and powdered sugar until smooth.
- Scoop portions of the mixture and roll them into 1-inch diameter balls. Place on a baking sheet lined with parchment paper.
- Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
- Dip each truffle into the melted chocolate, letting excess drip off, then roll in cocoa powder or sprinkles.
- Chill the coated truffles for at least 30 minutes or until the chocolate has hardened.
