Ingredients

Scale
  • 2 cups Fresh Raspberries
  • 1/2 cup Granulated Sugar (plus extra for whipping cream)
  • 1 cup Heavy Whipping Cream
  • 1 tablespoon Gelatin
  • 1/2 teaspoon Vanilla Extract
  • Pinch of Salt

Instructions

  1. Prepare the Raspberries: Rinse raspberries under cold water, pat dry, and set aside some for garnish.
  2. Make Raspberry Puree: Blend raspberries with half of the sugar, strain to remove seeds, and reserve some puree for swirling.
  3. Bloom the Gelatin: Sprinkle gelatin over cold water and let sit for 5 minutes.
  4. Heat and Dissolve Gelatin: Gently warm the raspberry puree, dissolve bloomed gelatin, and mix well.
  5. Whip the Cream: In a bowl, whip heavy cream with remaining sugar, vanilla extract, and salt until soft peaks form.
  6. Fold in Ingredients: Gently fold raspberry mixture into whipped cream to maintain fluffiness.
  7. Chill the Mousse: Spoon the mixture into cups, cover, and refrigerate for at least 2 hours.
  8. Serve with Flair: Drizzle with reserved raspberry puree and garnish with fresh raspberries and whipped cream before serving.

Notes

Ensure to let the mousse chill properly for optimal texture and flavor.
