Instructions

  1. Prepare the Beef Tenderloin: Trim any excess fat and create a pocket by slicing down the length of the tenderloin.
  2. Sauté the Vegetables: In a skillet over medium heat, add olive oil and sauté minced garlic for 1 minute. Add chopped mushrooms, cooking until golden, then toss in the spinach until wilted.
  3. Make the Stuffing: Combine the sautéed mixture with cream cheese and Parmesan, seasoning with salt, pepper, and thyme. Mix well.
