Description

Delicious pumpkin muffins topped with a sweet maple icing, perfect for fall and healthier than traditional treats.


Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the canned pumpkin, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and any extra spices.
  4. Gradually fold the dry ingredients into the wet mixture and mix until just combined.
  5. Line a muffin tin with paper liners and fill each cup about two-thirds full with the batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the muffins bake, whisk together maple syrup and powdered sugar to prepare the icing.
  8. Once the muffins are done, let them cool before drizzling with maple icing.

Notes

For a vegan option, use flaxseed meal in place of eggs and applesauce instead of oil.
