Description

A stunning dessert combining nutty pistachios, tart raspberries, and creamy cheesecake in an impressive dome shape.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 ½ cups fresh raspberries
  • ½ cup pistachios, chopped
  • ½ cup raspberry purée

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until mixed.
  2. Evenly press the crumb mixture into the bottom of a dome-shaped silicone mold and bake for 10 minutes until golden.
  3. In a mixing bowl, beat cream cheese until smooth, then mix in sugar, sour cream, and vanilla extract.
  4. Incorporate eggs one at a time until fully mixed.
  5. Gently fold in fresh raspberries and raspberry purée.
  6. Fill each mold with the cheesecake filling, leaving space at the top.
  7. Bake for about 30 minutes until set but slightly jiggly in the center.
  8. Cool at room temperature for 30 minutes, refrigerate for at least 2 hours, then unmold to serve.

Notes

Dust with powdered sugar or chocolate shavings before serving for added elegance.
