- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 ½ cups fresh raspberries
- ½ cup pistachios, chopped
- ½ cup raspberry purée
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until mixed.
- Evenly press the crumb mixture into the bottom of a dome-shaped silicone mold and bake for 10 minutes until golden.
- In a mixing bowl, beat cream cheese until smooth, then mix in sugar, sour cream, and vanilla extract.
- Incorporate eggs one at a time until fully mixed.
- Gently fold in fresh raspberries and raspberry purée.
- Fill each mold with the cheesecake filling, leaving space at the top.
- Bake for about 30 minutes until set but slightly jiggly in the center.
- Cool at room temperature for 30 minutes, refrigerate for at least 2 hours, then unmold to serve.
Notes
Dust with powdered sugar or chocolate shavings before serving for added elegance.
