Ingredients

- 1 cup unsalted pistachios, finely ground
- 1 cup heavy cream
- ½ cup powdered sugar
- 3 egg yolks
- 1 cup dark chocolate (at least 70% cocoa)
- ½ cup heavy cream (for ganache)
- 1 tsp vanilla extract
Instructions
- Prepare the pistachios by finely grinding until they resemble a coarse flour.
- Whip the heavy cream in a chilled bowl until soft peaks form.
- In another bowl, whisk together egg yolks and powdered sugar until pale and creamy.
- Gradually fold in the ground pistachios into the yolk and sugar mixture.
- Gently fold in the whipped cream to maintain fluffiness.
- Heat dark chocolate and heavy cream in a double boiler or microwave until melted and smooth to prepare the ganache.
- Spoon the mousse into dessert glasses and chill for about 2 hours or until set. Pour chocolate ganache over the top before serving.
- Optional: Garnish with chopped pistachios or fresh mint leaves before serving.
Notes
For a lighter option, substitute heavy cream for coconut cream. For a vegan version, use silken tofu and coconut cream.
