Ingredients

  • 1 cup unsalted pistachios, finely ground
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 3 egg yolks
  • 1 cup dark chocolate (at least 70% cocoa)
  • ½ cup heavy cream (for ganache)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the pistachios by finely grinding until they resemble a coarse flour.
  2. Whip the heavy cream in a chilled bowl until soft peaks form.
  3. In another bowl, whisk together egg yolks and powdered sugar until pale and creamy.
  4. Gradually fold in the ground pistachios into the yolk and sugar mixture.
  5. Gently fold in the whipped cream to maintain fluffiness.
  6. Heat dark chocolate and heavy cream in a double boiler or microwave until melted and smooth to prepare the ganache.
  7. Spoon the mousse into dessert glasses and chill for about 2 hours or until set. Pour chocolate ganache over the top before serving.
  8. Optional: Garnish with chopped pistachios or fresh mint leaves before serving.

Notes

For a lighter option, substitute heavy cream for coconut cream. For a vegan version, use silken tofu and coconut cream.
