- 1 pound Ground Beef
- 1 medium Onion, diced
- 1 medium Green Bell Pepper, diced
- 2 cloves Garlic, minced
- 1 can Corn or 1.5 cups frozen
- 1 can Cream of Mushroom Soup
- 2 cups Cheddar Cheese, shredded
- 2 cups Tater Tots
- Salt, to taste
- Black Pepper, to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef, diced onion, and diced green bell pepper until browned and soft, about 7-10 minutes.
- Add minced garlic and cook for an additional minute. Season with salt and black pepper.
- Stir in corn and cream of mushroom soup until well combined.
- Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
- Top with an even layer of tater tots.
- Bake in preheated oven for 30 minutes, or until tater tots are golden and crispy.
- Sprinkle cheddar cheese on top and bake for an additional 5-10 minutes until melted.
- Let cool for 5-10 minutes, then slice and serve warm.
Notes
For a lighter version, consider using lean ground beef, turkey, or homemade cream of mushroom soup.
