- 4 Leeks
- ½ cup Parmesan Cheese, grated
- 2 tbsp Olive Oil
- 3 cloves Garlic, minced
- 1 tsp Salt
- ½ tsp Black Pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Trim the root end and dark green tops off the leeks, slice them lengthwise, rinse well, and pat dry.
- In a mixing bowl, drizzle leeks with olive oil, toss, and season with salt, pepper, and minced garlic.
- Arrange leeks cut-side up on a baking sheet and roast for about 20 minutes until golden brown.
- Remove leeks and sprinkle with Parmesan cheese; return to oven for an additional 5 minutes until melted.
- Let rest for a few minutes before serving hot.
Notes
Store leftovers in an airtight container for up to 3 days. Can be served with roasted chicken or tossed in pasta.
