Ingredients

  • 2 ¼ teaspoons active dry yeast
  • 1 ¼ cups warm water (100-110°F)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 cup grated cheese (mozzarella and feta)
  • ½ cup sliced olives (green or black)
  • Fresh herbs (basil or rosemary, optional)

Instructions

  1. In a bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the all-purpose flour and salt.
  3. Add the olive oil and the frothy yeast mixture to the flour. Stir until a rough dough forms.
  4. Turn the dough out onto a floured surface and knead it for about 8-10 minutes until smooth and elastic.
  5. Mix in the grated cheese and sliced olives, ensuring even distribution.
  6. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour until doubled in size.
  7. Punch down the dough gently, shape it into a loaf, and place it in a greased loaf pan.
  8. Cover with a cloth and let it rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake for 25-30 minutes until golden brown and sounds hollow when tapped.
  11. Let cool on a wire rack before slicing.
