Ingredients

- 3 cups all-purpose flour
- 2 ¼ teaspoons active dry yeast
- 1 ¼ cups warm water (100-110°F)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 cup grated cheese (mozzarella and feta)
- ½ cup sliced olives (green or black)
- Fresh herbs (basil or rosemary, optional)
Instructions
- In a bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the all-purpose flour and salt.
- Add the olive oil and the frothy yeast mixture to the flour. Stir until a rough dough forms.
- Turn the dough out onto a floured surface and knead it for about 8-10 minutes until smooth and elastic.
- Mix in the grated cheese and sliced olives, ensuring even distribution.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour until doubled in size.
- Punch down the dough gently, shape it into a loaf, and place it in a greased loaf pan.
- Cover with a cloth and let it rise for another 30 minutes.
- Preheat the oven to 375°F (190°C).
- Bake for 25-30 minutes until golden brown and sounds hollow when tapped.
- Let cool on a wire rack before slicing.
Notes
Serve with olive oil and balsamic vinegar for dipping or pair with salads and sandwiches.
