Ingredients
- Red Potatoes (2 pounds)
- Bacon (6 slices)
- Onion (1 medium, finely chopped)
- Apple Cider Vinegar (1/3 cup)
- Sugar (2 teaspoons)
- Dijon Mustard (1 tablespoon)

Instructions
- Prepare the Potatoes: Wash the red potatoes and place them in a pot covered with water, adding a pinch of salt. Boil until fork-tender (15-20 minutes). Drain and cool slightly before slicing.
- Cook the Bacon: In a skillet, cook the bacon over medium heat until crispy, then let drain on paper towels. Reserve some drippings.
- Sauté the Onions: In the bacon drippings, sauté the chopped onions over medium heat until translucent (5-7 minutes).
- Prepare the Dressing: Whisk together the apple cider vinegar, sugar, Dijon mustard, salt, and pepper in a bowl. Add the sautéed onions and the bacon drippings.
- Combine Everything: In a large bowl, mix the sliced potatoes and crumbled bacon. Drizzle with the dressing and gently toss together.
- Serve Warm: Let the salad sit for a few moments to meld flavors, then serve warm or at room temperature.
Notes
You can use smoked tempeh as a vegetarian alternative to bacon. Adjust the seasoning to taste.
