Instructions

  1. Prepare the Potatoes: Wash the red potatoes and place them in a pot covered with water, adding a pinch of salt. Boil until fork-tender (15-20 minutes). Drain and cool slightly before slicing.
  2. Cook the Bacon: In a skillet, cook the bacon over medium heat until crispy, then let drain on paper towels. Reserve some drippings.
  3. Sauté the Onions: In the bacon drippings, sauté the chopped onions over medium heat until translucent (5-7 minutes).
  4. Prepare the Dressing: Whisk together the apple cider vinegar, sugar, Dijon mustard, salt, and pepper in a bowl. Add the sautéed onions and the bacon drippings.
  5. Combine Everything: In a large bowl, mix the sliced potatoes and crumbled bacon. Drizzle with the dressing and gently toss together.
  6. Serve Warm: Let the salad sit for a few moments to meld flavors, then serve warm or at room temperature.

Notes
