- 1 sheet puff pastry, thawed
- 8 oz fresh mushrooms, diced (cremini, button, or shiitake)
- 4 oz cream cheese, softened (or Neufchâtel for a lighter option)
- 2 cloves garlic, minced (or garlic powder as a substitute)
- ½ cup Parmesan cheese, grated (or Pecorino Romano)
- 1 cup fresh baby spinach
- 1 small onion, chopped (or shallots)
- Salt and pepper, to taste
Instructions
- Prepare the filling by sautéing chopped onion and minced garlic in olive oil until translucent. Add diced mushrooms and cook until moisture is released, then stir in spinach until wilted. Remove from heat to cool.
- In a mixing bowl, combine the cooled mushroom mixture with cream cheese, Parmesan cheese, salt, and pepper, mixing until smooth.
- Roll out the puff pastry on a lightly floured surface to a rectangle of approximately 12×15 inches.
- Spread the mushroom and cheese mixture evenly over the puff pastry, leaving a small border.
- Starting from one long edge, roll the pastry into a tight log and slice into 1-inch thick rounds.
- Arrange the pinwheels on a parchment-lined baking sheet and bake at 400°F (200°C) for about 25 minutes, or until golden brown.
- Cool slightly before serving. Enjoy warm with marinara or a creamy dip.
Notes
Best served warm with tangy marinara sauce or a zesty garlic aioli for added flavor. Can be made ahead of time and stored.
