Description

Quick and satisfying Mediterranean-inspired quesadillas filled with spinach, feta, mozzarella, and red onion.


Ingredients

  • 4 Whole Wheat Tortillas
  • 2 cups Fresh Spinach
  • 1/2 cup Feta Cheese
  • 1/2 cup Mozzarella Cheese
  • 1 Red Onion, diced
  • 1 tablespoon Olive Oil
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste

Instructions

  1. Prepare the Ingredients: Wash the spinach and pat it dry. Dice the red onion and crumble the feta cheese into a bowl.
  2. Heat the Pan: Drizzle olive oil in a non-stick skillet over medium heat and let it heat for a minute.
  3. Cook the Spinach and Onion: Add the chopped red onion to the skillet and sauté for 2-3 minutes until soft. Then, add the spinach and cook for an additional 2 minutes until wilted.
  4. Assemble Your Quesadilla: On one half of a tortilla, layer the sautéed spinach and onion, followed by mozzarella and feta cheese.
  5. Fold and Cook: Fold the tortilla in half and place it in the skillet. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
  6. Serve: Remove from heat, cool for a minute, cut into wedges and serve warm.

Notes
