- 4 Whole Wheat Tortillas
- 2 cups Fresh Spinach
- 1/2 cup Feta Cheese
- 1/2 cup Mozzarella Cheese
- 1 Red Onion, diced
- 1 tablespoon Olive Oil
- 1 teaspoon Garlic Powder
- Salt and Pepper to taste
Instructions
- Prepare the Ingredients: Wash the spinach and pat it dry. Dice the red onion and crumble the feta cheese into a bowl.
- Heat the Pan: Drizzle olive oil in a non-stick skillet over medium heat and let it heat for a minute.
- Cook the Spinach and Onion: Add the chopped red onion to the skillet and sauté for 2-3 minutes until soft. Then, add the spinach and cook for an additional 2 minutes until wilted.
- Assemble Your Quesadilla: On one half of a tortilla, layer the sautéed spinach and onion, followed by mozzarella and feta cheese.
- Fold and Cook: Fold the tortilla in half and place it in the skillet. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.
- Serve: Remove from heat, cool for a minute, cut into wedges and serve warm.
Notes
Add sliced avocado or incorporate other veggies for extra nutrition. Perfect for quick meals or gatherings.
