Ingredients

  • 1 cup Unsalted Butter
  • 1/2 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 2 cups All-Purpose Flour
  • 1 cup Marzipan
  • 1 teaspoon Almond Extract
  • 1/2 teaspoon Salt
  • 1/4 cup Sliced Almonds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine unsalted butter, granulated sugar, and brown sugar. Blend until fluffy and pale, about 3-5 minutes.
  3. Cut the marzipan into small chunks and add it to the butter-sugar mixture. Blend until well combined.
  4. Stir in almond extract and a pinch of salt.
  5. Sift in all-purpose flour. Mix slowly on low speed until just combined.
  6. Use a tablespoon or cookie scoop to drop dough balls onto a lined baking sheet, slightly flattening each ball and pressing sliced almonds on top, if desired.
  7. Bake for 15-20 minutes, or until the edges are golden.
  8. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a healthier version, consider swapping half the all-purpose flour for whole wheat flour. Store cooled cookies in an airtight container at room temperature.
