Ingredients

- 1 cup Unsalted Butter
- 1/2 cup Granulated Sugar
- 1/4 cup Brown Sugar
- 2 cups All-Purpose Flour
- 1 cup Marzipan
- 1 teaspoon Almond Extract
- 1/2 teaspoon Salt
- 1/4 cup Sliced Almonds (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine unsalted butter, granulated sugar, and brown sugar. Blend until fluffy and pale, about 3-5 minutes.
- Cut the marzipan into small chunks and add it to the butter-sugar mixture. Blend until well combined.
- Stir in almond extract and a pinch of salt.
- Sift in all-purpose flour. Mix slowly on low speed until just combined.
- Use a tablespoon or cookie scoop to drop dough balls onto a lined baking sheet, slightly flattening each ball and pressing sliced almonds on top, if desired.
- Bake for 15-20 minutes, or until the edges are golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a healthier version, consider swapping half the all-purpose flour for whole wheat flour. Store cooled cookies in an airtight container at room temperature.
