A delightful treat combining the sweetness of marshmallows and caramel with crunchy popcorn, perfect for movie nights or gatherings.
Ingredients

- 12 cups popped popcorn (air-popped, stovetop, or microwave)
- 1 cup sugar (or coconut sugar/maple syrup)
- 1/2 cup butter (or coconut oil)
- 2 cups marshmallows (or vegan marshmallows)
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Pop the popcorn kernels using your preferred method and place in a large mixing bowl.
- Melt butter in a medium saucepan over low heat, then add sugar and stir until boiling. Boil for 4-5 minutes until light amber.
- Remove from heat and stir in vanilla extract and salt.
- Immediately pour caramel over the popcorn and fold gently to coat.
- While warm, fold in marshmallows until melted and mixed.
- Spread on a lined baking sheet and let cool for 30 minutes before serving.
Notes
For a lower glycemic index, substitute sugar with coconut sugar. Use homemade marshmallows if preferred.
