Description

A delightful treat combining the sweetness of marshmallows and caramel with crunchy popcorn, perfect for movie nights or gatherings.


Ingredients

Scale
  • 12 cups popped popcorn (air-popped, stovetop, or microwave)
  • 1 cup sugar (or coconut sugar/maple syrup)
  • 1/2 cup butter (or coconut oil)
  • 2 cups marshmallows (or vegan marshmallows)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Pop the popcorn kernels using your preferred method and place in a large mixing bowl.
  2. Melt butter in a medium saucepan over low heat, then add sugar and stir until boiling. Boil for 4-5 minutes until light amber.
  3. Remove from heat and stir in vanilla extract and salt.
  4. Immediately pour caramel over the popcorn and fold gently to coat.
  5. While warm, fold in marshmallows until melted and mixed.
  6. Spread on a lined baking sheet and let cool for 30 minutes before serving.

Notes

For a lower glycemic index, substitute sugar with coconut sugar. Use homemade marshmallows if preferred.
