  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups fresh spinach
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon chili flakes
  • 2 tablespoons lemon juice

Instructions

  1. If using dried butter beans, soak them in water overnight. If using canned, drain and rinse.
  2. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  3. Stir in fresh spinach and cook until wilted, approximately 2-3 minutes.
  4. Add butter beans, vegetable broth, diced tomatoes, and chili flakes. Stir well and bring to a gentle simmer.
  5. Simmer uncovered for about 20 minutes, stirring occasionally. Finish with lemon juice and season with salt and pepper.
