- ½ cup pureed mango
- ½ cup chopped strawberries
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and prepare a cupcake tin with liners.
- Cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, folding gently until just combined.
- Gently fold in the mango puree and chopped strawberries.
- Spoon the batter into cupcake liners, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
