  • ½ cup chopped strawberries
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a cupcake tin with liners.
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, folding gently until just combined.
  6. Gently fold in the mango puree and chopped strawberries.
  7. Spoon the batter into cupcake liners, filling each about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
