- 1 Ripe Mango, diced

- 1/2 cup Coconut Milk (optional)
Instructions
- Rinse rice under cold water until the water runs clear, then cook according to package instructions in water or coconut milk.
- Dice the mango and set aside.
- Once the rice is cooked, fluff with a fork and stir in lime juice and salt.
- Gently fold in the diced mango and cilantro, being careful not to over-mix.
- Serve in a dish garnished with additional cilantro or lime wedges.
Notes
