Instructions
- Prepare the Bananas: Peel and slice bananas into 1-inch thick slices.
- Make the Peanut Butter Mixture: Mix peanut butter and melted coconut oil in a small bowl until well combined.
- Assemble the Layers: Place a banana slice on a parchment-lined baking sheet, top with peanut butter, and create sandwiches with remaining slices.
- Freeze the Banana Sandwiches: Freeze on the baking sheet for 1 hour until firm.
- Prepare the Chocolate Coating: Melt dark chocolate and remaining coconut oil until smooth.
- Final Assembly: Dip each banana sandwich in chocolate, sprinkle with chopped peanuts, and return to the baking sheet.
- Freeze Again: Freeze for an additional hour until chocolate is hardened.
