Ingredients

- 3 tablespoons butter (or coconut oil for a vegan version)
- 1 package (10 oz) mini marshmallows (or sugar-free for a lower-sugar option)
- 6 cups Rice Krispies cereal (or any puffed rice cereal for a gluten-free version)
- Zest of 1 large lemon
- 1/4 cup fresh lemon juice (or bottled juice as a substitute)
- 1/4 teaspoon salt
- Optional: White chocolate drizzle
Instructions
- Prepare your pan by greasing a 9×13 inch baking dish lightly with non-stick spray or butter.
- In a large saucepan over medium heat, melt the butter, stirring occasionally to prevent burning.
- Once melted, add in the mini marshmallows and stir until fully melted and smooth.
- Remove from heat and add lemon juice, lemon zest, and salt. Mix thoroughly.
- Add the Rice Krispies cereal and stir gently to coat evenly.
- Transfer the mixture to the prepared baking dish and spread evenly, pressing down gently.
- Let cool at room temperature for about 30 minutes before slicing into squares.
Notes
Store in an airtight container for up to one week at room temperature. For longer storage, refrigerate for up to two weeks.
