- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 2 tablespoons lemon juice
- Zest of 1 lemon
- 1 cup powdered sugar (for meringue)
- 2 egg whites (for meringue)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and granulated sugar until light and fluffy.
- Add in the eggs, lemon juice, and lemon zest, mixing until just combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture and stir until a soft dough forms.
- Drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
- To prepare the meringue, beat the egg whites until soft peaks form, then gradually add powdered sugar and beat until stiff peaks form.
- After baking the cookies for 10 minutes, dollop meringue on top of each cookie and return to the oven for an additional 2-5 minutes, until golden.
- Allow cookies to cool on a wire rack before serving.
Notes
For gluten-free cookies, substitute all-purpose flour with a gluten-free blend. For a dairy-free version, use coconut oil instead of butter and flax eggs instead of regular eggs.
