Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 cup powdered sugar (for meringue)
  • 2 egg whites (for meringue)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and granulated sugar until light and fluffy.
  3. Add in the eggs, lemon juice, and lemon zest, mixing until just combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture and stir until a soft dough forms.
  5. Drop rounded tablespoons of dough onto a lined baking sheet, leaving space between each cookie.
  6. To prepare the meringue, beat the egg whites until soft peaks form, then gradually add powdered sugar and beat until stiff peaks form.
  7. After baking the cookies for 10 minutes, dollop meringue on top of each cookie and return to the oven for an additional 2-5 minutes, until golden.
  8. Allow cookies to cool on a wire rack before serving.

Notes

For gluten-free cookies, substitute all-purpose flour with a gluten-free blend. For a dairy-free version, use coconut oil instead of butter and flax eggs instead of regular eggs.
